The three masterclasses which took place at the university’s state of the art Culinary Arts Studio in Eastbourne, as part of the Feastbourne Festival were a sell-out success.
Each masterclass was presented by experts in their field and included talks on oils and vinegars, vegetables and chocolate. Audiences were greeted with a glass of wine and a warm welcome from Chris Dutton, Principal Lecturer at the School of Service Management.
The week
began with John and Mary from Stratta taking their
audience on a journey through the world of oil and vinegars, delighting
everyone with unique recipes, remedies and a wide variety of tasters.
Martyn and the Head Chef Simon from Bills (based in Lewes and Brighton) followed with a magnificent display of seasonal vegetables. They talked about the many different ways to source, cook and eat vegetables with some surprising results.
Finally Alan Whatley (pictured above), an expert in the field of chocolate, explained to an enthusiastic audience the differences between the various types of chocolate available, including the very best in the world (Toscano - Chuao) a single source bean variety. Everyone enjoyed the many samples of chocolate and there were many tips and how to choose the best picked up some easy to make recipes.
