Former Gurkha in the British Army, Pemba Lama (pictured below), will share his extensive knowledge of Himalayan cuisine, at a masterclass taking place at the university's culinary arts studio, in Eastbourne. The event is one of four cookery masterclasses organised by the university as part of this year's Feastbourne.
Feastbourne is a complete celebration of food and drink and the way in which it interacts with the town of Eastbourne and the surrounding Sussex area. The whole event is designed to educate, inspire and bring a sense of pride, purpose and passion in cooking.
The first masterclass, on Sunday 7 October, sees pastry chef Matt Owens demonstrate hot and cold desserts from Knickerbocker Glories to chocolate fondants, chocolate teaspoons to biscuits. The former pastry chef of the year now works as an executive pastry chef for Zuidam UK, experts in producing sweets and pastries.
Alan Whatley, Chairman of The Association of Pastry Chefs and lecturer at Brooklands College, Surrey, is returning to Feastbourne for the second year, to perform a highly visual masterclass on 'The art of pulled and blown sugar'. Taking place on Monday 8 October, participants can expect to see an art form emerge and take part with tasters as well as get some hands-on experience.
Pemba Lama will perform a masterclass on Ghurka cookery on Tuesday 9 October. Pemba, who retired from the British Army in 2002 after 23 years as a chef with the Brigade of Gurkhas, is a specialist in ethnic cuisine, having amassed expertise from serving all over the world including Borneo, the Balkans, Iraq and Hong Kong.
After he retired, Pemba was appointed as a civilian instructor at the Defence Food Services School where he still works teaching both Gurkha and British Army chefs. He has cooked for most members of the Royal Family and numerous other VIPs and regularly conducts masterclasses with all proceeds going to the Gurkha Welfare Trust.
Finally on Wednesday 10 October Keith Mitchell, executive head chef of The Grand Hotel Eastbourne, will illustrate the art of making canapés. Keith is highly skilled with a succession of gold medals in this area.
