A cooking collaboration

The School of Service Management at the University of Brighton is hosting a Hotpot forum, which will be opened by writer, broadcaster, and the UK's longest serving food celebrity, Marguerite Patten CBE.

Topics to be covered will include the social role of institutional catering, cooked food and the impact on daily vitamin intakes, health and sustainability issues and new recipes and techniques for responsible eating. There will also be a filmed demonstration of microwave applications in healthy eating.

School of Service Management's Hotpot forum

The event, which will take place on 22 September, is free for local businesses to attend and will appeal to any organisation with a food service operation. There will be the chance to learn about healthy eating and wellbeing and information about how to explore new markets and understand the latest technology and food processes. There will also be a chance to network with other local businesses.

Hotpot is a joint project between Institut Polytechnique LaSalle Beauvais in France and the School of Service Management aiming to provide innovative technologies to produce affordable food with good nutritional value as well as extended life and taste that is acceptable to consumers.

The forum is being held simultaneously between the university and the Institut, with four presentations from each institution during the course of the day and live television link between the two venues.

The day will finish with a chance to discuss the issues that arise during the day and to ask questions of a panel of experts.
